The history of tea processing is a long and gradual story of refinement. Generations of growers and producers have perfected the way of manufacturing tea. There are two to seven procedures are involved in the processing of fresh tea leaves, such as withering, fixing, oxidation, fermentation rolling, drying, and aging. Each of these procedures required high accuracy and high stability in temperature and moisture control to avoid spoilage due to excess moisture and fluctuating temperatures.

Among all these processes fermentation is one of the most important processes where tea leaves change color and smell. It is a complex chain of biochemical reactions that take place during the fermentation process and once such changes reach their optimum point, the process should be stopped. The physical parameters that affect the fermentation process are relative humidity and temperature. Thus control of these physical parameters will be very useful to maintain proper fermentation conditions to have desired quality of tea. An ambient relative humidity of 95-98%RH at 20-26℃ is required to maintain fermentation, and even a small fluctuation in temperature and humidity level will affect the process, reducing yield.
