What are General Temperature Requirements for Butter Transportation


Although butter microbiologically is fairly stable, chemically it is less stable and for this reason, it must be held < -12°C during storage and shipment. Damage to butter in transit is most often caused by temperature fluctuation. Butter is a dairy product made by churning milk, a process separating the solid fats from the liquid, known as buttermilk. Due to its high concentration of fat, butter has a rich flavor and creamy texture. It works especially well for high-heat cooking like sauteing and pan-frying and can help prevent sticking while adding flavor. Butter is also widely used in baking to add texture and volume to baked goods and desserts. Plus, it can be spread on bread, roasted veggies, pasta dishes, and many more. Butter is regarded as one of the staple foods used in many food products cooked in the household globally.

Quality of butter is largely dependent on temperature. It affects mainly firmness and standing up properties of butter. For transportation of butter from factory to distributors and from distributors to retailers, cold chain is essential to maintain. Butter may be transported either frozen or chilled. For frozen transportation of butter, temperature range is -16 to -18°C while for chilled transport; temperature range is 1-4°C. Temperatures may deviate from these values, depending on the particular transport conditions. Butter must be flash-frozen to protect it from losses in quality. The rapid cooling results in the formation of small ice crystals which has no negative effect. If, however, the temperature is reduced very slowly, relatively large ice crystals are formed which can result in losses of quality (crumbly texture).
