Kiwifruit are climacteric fruit which can be successfully stored at 0°C for 4 to 6 months but soften markedly when exposed to even minute concentrations of ethylene. Kiwifruit handlers and researchers have focused on ways of maintaining firmness during storage primarily through rigorous low temperature(0°C) management, ethylene exclusion and use of controlled atmospheres.
Kiwis have quite low respiratory activity and store well. Under optimum storage conditions at a temperature of -0.5ºC and 0ºC and a relative humidity of 90 to 95%, they can be stored for between 3 and 6 months. Californian kiwis can be stored for up to 8 months. A condition for this storage, however, is that the fruits are harvested at the right moment; the storage period reduces drastically (to around 2 months) if harvesting takes place too late. A strict condition for long-term storage is that ethylene levels are kept very low. 10 ppb for a week accelerates softening of the fruits. Even under optimum conditions, the firmness of the fruit can diminish rapidly. Storage alongside ethylene-producing products such as apples and pears must be avoided at all costs. Finally, there must be sufficient air circulation during storage.
