For negative-temperature storage, the reference temperature is -18°C, but some less fragile foodstuffs intended for professional use can be kept at -12°C. For the end consumer, frozen foodstuffs are subject to special regulations: they must be frozen very quickly in special tunnels, and then the storage temperature is rigorously monitored right through to distribution.
