Perishable foods such as fresh meat, fish and seafood are ideal environments for bacterial growth. They must therefore be kept :
üfroids at 4ºC or less;
üchauds at 60ºC or higher.
At all times, avoid storing food at room temperature, between 4°C and 60°C. This is the danger zone. At these temperatures, bacteria grow rapidly and can produce dangerous toxins. Between 35°C and 45°C, the number of bacteria can double every 15 minutes. To keep food hot, a temperature of at least 60°C is required. Bacteria then stop multiplying.
