Protein denaturation due to temperature change Bluetooth HACCP Temperature data logger

What is protein denaturation?

Denaturation is the breaking of weak links. It also involves breaking the hydrogen bond within a molecule.

This takes place inside the molecule and is useful for the structural protein to remain in good order in its original form. Denatured proteins are intended to be loose and to achieve a random structure, and most are in fact insoluble.

Normally said to be denatured, a protein tends not to resemble its normal state and this occurs when some of the hydrogen bonds are actually broken. Weaker bonds tend to break too much if more heat is given or exposed to acids such as lemon or citric acid.

Increased temperature causes thermal agitation of the atoms in the molecule. This causes intermolecular interactions, such as hydrogen bonds, which stabilize the spatial structure, to break down. Indeed, hydrogen bonds serve to stabilize proteins in a three-dimensional form where they can perform their functions.

At high temperatures, hydrogen bonds are broken and can no longer maintain the protein's shape, making it no longer functional. Most proteins are denatured at temperatures above 41 degrees Celsius, which explains why high fevers are so dangerous in humans. This process is also responsible for the coagulation of egg white protein, ovalbumin, when eggs are cooked.

Consequently, the environment in which biopharmaceutical products are transported and stored is vital. The temperature logger is an effective tool for monitoring temperature.

As a Bluetooth temperature data logger, the Blue Tag T10 is small in size. It's easy to connect and use. All parameters can be set via the cell phone application. This wireless HACCP temperature sensor can also be connected indefinitely. One sensor can be connected to an unlimited number of users on an unlimited number of Android phones.

BlueTag T10 Bluetooth HACCP Temperature Data Logger is highly suitable for low-temperature logistics, vaccine transport, fresh food distribution, refrigerated transport, especially incubator transport, which can easily take the reading without opening the box.

This HACCP temperature sensor is also ideal for monitoring the temperature of certain living scenes, such as in the home, wine cellar, cigar storage room, baby room, basement and greenhouse, etc. Within a 10m Bluetooth range, you can update and display the temperature change every minute simply by clicking on the updated interface on your phone without doing anything.
