Citrus fruits are not climacteric, so their quality does not improve after harvesting. Proper storage can slow down their development: suitable positive temperature, relative humidity of 85-90% and ventilation. Harvesting must take place at a stage of ripeness and quality close to optimum, characterized by juice content, dry extract/acidity ratio and flavor. During harvesting, the fruit must be handled with care and must not get wet, in order to limit the subsequent risk of physiological alterations or the entry of pathogens. The fruit must be transferred to packing stations as quickly as possible.
As ripening approaches, the green chlorophyll pigments gradually disappear, allowing the other colored pigments of the epidermis (yellow, orange and red) to be revealed. This evolution requires cool temperatures below 13°C.
These temperature conditions do not exist in the tropics, nor in Mediterranean climates in early autumn when early varieties are harvested. In these cases, fruit remains green or is poorly colored.
Fruit can be de-greened if a significant start has been made to the degradation of chlorophyll pigments. This is done by placing the fruit in an enclosure with a constantly renewed atmosphere containing 1.0 to 5.0 ppm ethylene.
The temperature is between 22 and 25°C for oranges, lower for lemons, and the relative humidity is between 85 and 90%. This technique reduces storage time, as ethylene stimulates the physiological senescence of citrus fruit. Cold storage time can be improved by applying wax or shrink-wrap, which reduces respiratory exchange and water loss. Controlled atmosphere, on the other hand, has little or no influence.
