Temperature Monitoring in Salad Bars


Salad bars offer a wide variety to meet the requirements of the meal pattern, especially for vegetable subgroups. Depending on the size of the salad bar, guests can also create their own dishes. Salad bars require temperature monitoring. These foods are generally of concern because they contain protein, are moist and have a neutral or slightly acidic pH, providing ideal conditions for bacterial growth. At the right temperature, these foods create harmful micro-organisms or toxins that reproduce rapidly, leading to food-borne illnesses, the most common of which are salmonella and E. coli.

Cut leafy vegetables should be kept refrigerated to reduce bacterial growth. Studies have shown that E. coli survival and growth decrease at lower temperatures and increase at higher temperatures. If you have a salad bar, make sure that cut vegetables are placed on ice and that the temperature is not in the danger zone of  5°C to 57°C.
