Honey is a very healthy and delicious food, because it is rich in nutrients and antioxidants. However, if it couldn’t be preserved properly, it may spoil or turn sour. So, the best way to store it is to keep it in a low temperature and dark place, keep the temperature at 5~15 °C, and the air humidity does not exceed 75%.
When there is too much light, the vitamin B complex in honey will be destroyed, and the vitamins will be inactivated under strong light, resulting in the loss of nutrients. A dry, clean and ventilated environment is used to prevent honey from being contaminated by cross-smelling or in an environment with a lot of microorganisms.
The best nutrients in honey are protein active enzymes (an important source of amino acids), organic acids (antioxidants), vitamins, the long-term storage temperature for them is 5~15 °C. When the temperature reach 30 °C in summer, it is recommended to put it in the fresh-keeping layer of the refrigerator, not in the freezer layer. Please remember not to put it in a place with high humidity, because when the humidity in the environment is too high, honey may deteriorate due to rapid absorption of water vapor.
