Butter is a dairy product made from the fats and proteins in milk. It is a beloved ingredient that enriches cooking worldwide. There are so many ways to eat it: sweet cream butter on bread, baked goods made with cultured butter, vegetables cooked in ghee, etc. The origin of butter goes back about 10,000 years to when humans first began to domesticate animals. Most butters were made by hand on farms until the middle of the 19th century when the first butter factories began to appear. Today’s butter manufacturing is usually done via pipelining processing, but batch processing is done on a smaller scale as well.
The temperature should be strictly monitored during several main steps for butter production. After collecting and checking, the whole milk will be transferred to the separator to separate into cream and skim milk. Then the cream should be pasteurized at 82-88℃ or more to remove any microorganisms. Then the cream need to ripening to acquire desirable flavour and aroma characteristics for cultured butter. The cream is ripened in 2 stages: 1st stage at 21°C to pH 5.5 and then 2nd stage at 13°C to pH 4.6. Then, the cream need to age and crystallize at 14℃ for around 8 hrs. Next, the aged cream should be violently agitated at 6-14° C for 30 min to break down the fat globules, causing the fat to coagulate and form butter grains and buttermilk. After draining & washing, and salting, the butter is finally patted into shape and then wrapped in waxed paper, and then stored in a cool place.
