Proper temperature control is the single most important factor in reducing strawberry spoilage and maximizing post-harvest life. The best way to slow this deterioration is to remove the strawberries from the heat as quickly as possible and keep them at a temperature close to 0°C. Neglecting to keep fruit at low temperatures during handling, storage and transportation will result in loss of quality and market value. When the temperature of strawberries rises from 0 to 10°C, their rate of deterioration is two to four times faster. The shelf life of fruit kept at 20°C is only a quarter to half that of fruit kept at 0°C. Strawberries will only last a few hours if left in the field at around 30°C.
Fruit must be protected when left in the field after harvesting. Because of their dark color, strawberries exposed to direct sunlight absorb heat and warm up quickly, reaching temperatures higher than the ambient air. By keeping them in the shade, their internal temperature can remain lower than that of the ambient air. The extent to which the fruit warms up depends on the temperature difference between the fruit and the air, the length of exposure to the sun and the amount of air (breeze) circulating over the strawberries.
